Anyone out there with a degree/masters in Geography or GIS, just wondering what kind of jobs you can get and what it is like??

Have you looked at Geography, planning and enviornmental policy in UCD. Here is a link to the course: Course info from the UCD website

DIT also have a course about Geography. I think it is called Geomatrics or something on the lines. Other colleges you can do Geography as an Arts subject and possibly end up as a teacher.
