Roasting Garlic

    I bought a few heads of garlic today for roasting and I was wondering if anyone had any good tips for storing them?
    I read you can leave them in the foil but would be better off to steep them in some olive oil enough to cover the top. I only have E.V.O.O and I was afraid it might overpower the garlic as it won't be so pungent.

    Any advice would be much appreciated. :)
