How to pluralize this sentence?

There are other permutations of s's and apostrophes but I'm pretty sure it's one of these three. The truth of the sentence doesn't matter, it's just something I made up as an example

And while we're at it, is "s's" the correct plural of "s?"

'Last names' implies more than one name each. 'Last name' is one per case. IMHO.
