A Healthy vegetable curry recipe, please

    If anyone has the time to post one. I am searching some sites for one and they all seem to be recipes with coconut milk. Is there a healthier recipe out there that guys can post. I think coconut milk can be very fattening, and im aware there's a low fat version.
    Any other ideas though, please?

    hey there ,
    you should check rose elliots book for vegetariens. there is a healthy vegetable curry in there without any coconut milk or anyting like that :)

    Make sure not to boil thee yogurt, it can curdle

    I make a quick curry with no yog or coconut milk. I don't use measurements its just all chucked in.

    Potato diced
    cauliflower in florets
    broccoli in florets
    onion chopped
    tin mixed pulses or chickpeas
    curry paste - to taste (i use either balti or jalfrezi)
    Stock
    Tin tomatoes

    sautee potato and onion until softened in a large pan with lid on, then add cauli and broccoli and add curry paste, mix until coated. Add all other ingredients and simmer for about 20-30min until potaotes are cooked through. then eat and enjoy.
    its fairly low cal, unless you eat it with a huge naan which I usually do :o

    Just a quick q. I got a jar of balti sauce rather than a paste. How much sauce would you use, roughly even?

    Yep that one works very well :)

    If you don't have butternut squash, you can replace it with potatoes

    Aye! And I usually throw in 2 cans of chick peas instead of one. Chick peas are brilliant in a curry. For all you carnivores out there (me included): you really won't miss not eating meat when you taste this!
