Yo Mul - I see you were inundated with responses.
I myself have been looking around and can't really find much. I'm considering one in Hartstown college blanch, starts in September, reckon it will be basic, but a good starting point.
There is a shop in Drogheda, but they only run the course during the week, which for me is no good.
IF you happen upon any good courses, please can you PM me...

    Thanks

Grainne is running classes in Dublin at the moment, they are filling up very quick so I don't know how much availability she has but she's excellent, well worth a try.

I don't know where you are but if you're in South Dublin, I did one a few years ago at Foxrock Institute (behind Supervalu at Deansgrange Cross) which was very good. They also run them in Newpark as part of the adult education classes and actually most adult education centres run them and they are very good.

In Dun Laoghaire Cakebox (http://www.cakebox.ie/sugarcraft-courses/) also run them - I haven't been to theirs but their shop is good for supplies and the staff very very helpful. I'd imagine their classes are good, however they are more expensive.

I do think Kitchen Complements off Chatham St run courses too? Not sure.

Anyway, enjoy, once you get the basics sorted and get to know the basic tools and how to use them there is great fun to be had. I'm currently planning a fairy princess cake for my little girls birthday party and heading into cakebox in the next couple of days to get some purple colouring and sparkles!

    Enjoy.
