Ideas for Mushroom Recipes

    Hey all,

    The grocers close by has got some really lovely mushrooms in and I'm returning today to pick up some more. They are nothing fancy, (white and largish, large buttons? haven't a notion) but are really tasty.

    Looking for a recipe idea for tonight. Had them last night stuffed with roast peppers, goat's cheese and pine nuts.

    Also am a veggie.

    Any suggestions would be more than welcome.

    Failing that if you have the time you could try mushroom ravioli with a white wine cream sauce! delicious - just type into google for the recipe

    Make a stroganoff (without the steak) and dress some pasta with the sauce. If you can find a few dried porcini mushrooms, the flavours will be great.

    Soak the porcini in a cup of boiling water for 20 to 30 minutes. Cook some finely sliced onion in a little butter and oil, add the sliced mushrooms and cook until they are softened, squeeze over the juice of half a lemon and cook for a few minutes. Add the diced porcini and strain the soaking liquid into the pan. Reduce, add smoked paprika, add sourcream or creme fraiche and a little chopped parsley. Cook the sauce until its a consistency you like and add to cooked pasta.

    Get some nice baps, rockett, jalopeno relish. Onions and (strong!) cheese optional.

    Fry your mushrooms with butter and a wee bit of garlic (and onions!) and enjoy.

    Cheers all, there some great suggestions. Ran out to get ingredients earlier but she rang and has requested a takeaway and beer. :( (She had a rough day.)

    Will definately be trying all them in the future though.

    Mushroom paté:
    250g/half a pound of mushrooms
    30g/an ounce of butter
    3-4 garlic cloves, peeled and finely chopped
    250g/half a pound of cream cheese (Philadelphia)
    salt and pepper

    Clean and trim the mushrooms, chop finely.

    Heat the butter in a large frying pan over a medium heat. Add the mushrooms and garlic and fry gently, stirring frequently for 10 mins or until all the moisture has evaporated.
    Leave it to cool.
    Blend the mushrooms in a food processor until smooth, add the cream cheese and blend again until well mixed.
    Season to taste then leave to cool completely.
    Refrigerate for at least an hour for the garlic flavour to develop.
    Keeps for a week in the fridge.
