Pale Ale Extract Recipe

    I want to do a 1 gallon pale ale
    I have some Northern Brewer and Cascade hops (however, without thinking I froze, defrosted and froze again, are they destroyed?)
    Ive also 100g Crystal malt

    Anyone any suggestions what I can do to make a well balanced, easy-drinking pale ale?

    Recipe below for a 23L batch of a US pale ale with a scaled to 4.5L batch too. I myself would try to make a bigger batch than 4.5L as its a bit of work for 10 pints. Your hops will be fine :)

    Pale Ale 23L
    3.00 kg. Dry Light Extract
    .2 kg. Crystal Malt 60°L
    20 g. Northern Brewer (Whole, 10 %AA) boiled 60 minutes.
    25 g. Cascade (Whole, 5.4 %AA) boiled 30 minutes.
    25 g. Cascade (Whole, 5.4 %AA) boiled 15 minutes.
    50 g. Cascade (Whole, 10 %AA) boiled 0 minutes.
    Yeast: WYeast 1056 American Ale™ or US-05
    Original Gravity: 1.049
    Terminal Gravity: 1.011
    Color: 8.16 SRM
    Bitterness: 40.8 IBU
    Alcohol (%volume): 5.0 %

    Scaled down to 4.5L batch
    0.59 kg. Dry Light Extract
    0.04 kg. Crystal Malt 60°L
    4 g. Nugget (Whole, 10 %AA) boiled 60 minutes.
    5 g. Cascade (Whole, 5.4 %AA) boiled 30 minutes.
    5 g. Cascade (Whole, 5.4 %AA) boiled 15 minutes.
    10 g. Cascade (Whole, 10 %AA) boiled 0 minutes.

    Looks good, and all I'll need is the DME and the yeast, going to do this asap!!!!!

    Any thoughts on putting a little honey into a pale ale, sometimes I think it could work, othertimes Im not so sure.

    A lot of the honey flavour will be driven off during fermentation so maybe better add some during secondary when fermentation slows down. You could try priming the bottles with honey at 3.5g per 500ml, but such small amount will you notice it. I must prime a few bottles with honey with my next brew to test it out myself . You might want heat honey with some water in microwave for couple minutes before using.
