Freezing pastry.

    Hi guys I'm doing a bit of food for a party and was wondering if I blind baked pastry in flan cases could I then freeze it in the cases or could I/should I freeze it before blind baking? Would appreciate any advice.

    Make it and freeze it in lumps. I find it handles better after being frozen and rolled out.
