Temperature probe

I've been watching quite a bit of Good Eats recently, and have picked up some good tips, but he's got a gadget I'm having difficuly finding and think would be a great help with roasting.

It's a temperature probe with a long lead. He pushes the probe end into his meat, then trails it out of the closed oven and plugs the other end into some sort of temp guage - I'm guessing when the meat hits a certain temp, an alarm goes off or something - they never show that bit.

It's no great hassle opening the door and sticking my probe into the meat (oo-er) of course, but I don't even know what this thing is called nor where I might get one.

I've not heard of using a probe thermometer in the oven with the door closed. Also the thermometers on nisbets are very expensive - will it really make such a difference? It might be worth trying a chefs suppliers in town, then sourcing their recommendation online.

The probe bit goes into the meat and stays there. The wire comes out of the oven and attaches to the display. The display rings when your meat is done.

I picked one up in Ikea for under a tenner

and so if you have one, a picnic cooler, and zip lock bags. Then you can do your own sous vide beef (or anything else for that matter)
