    Buttermilk Plant

    A what?

    Using this recipe you can have buttermilk whenever you need it for your Irish soda bread.

    INGREDIENTS
    1 oz sugar
    1 oz fresh yeast
    1 quart of tepid milk or milk and water.


    METHOD
    1. Cream yeast, sugar and milk gradually.
    Put in a well scalded jug or crock.
    Cover and put in warm place to ferment.
    Leave until it smells like buttermilk, strain off liquid and use.
    2. Pour tepid water over lumps in a strainer to wash. Return to crock and add more milk or milk and water to make more buttermilk.


    The yeast grows and after some time the plant can be divided and another plant started.

    I put lemon juice in milk - similar result!

    Thats what I do too. It has the advantage of being instant and you only make as much as you really need.
