Wheat beer additions

    I have purchased my coppers wheat beer kit, wheat beer yeast, 50g curacao orange peel and 100g of Coriander seeds.

    Can anyone share any advice on the method used to add the orange and coriander. I was going to boil them in a muslin cloth for 10mins and sieve them and add them to the fermentor when I'm adding my kit. Should I soak them in cold water first?

    Also any guide on quantities of orange peel/Coriander seeds to use?

    First question has to be, what level are you brewing at? Kit or extract / all grain?
    I know you say kit but you can get extract kits as well so I just want to make sure.

    Extract and all grain both do a full boil. In that case you add during the last part of the boil. 5 mins would be my own preference.

    If kit, I would say you should do a partial boil of some DME for 15 mins and add it then, though it will be less effective than a full wort boil, you don't want (or have the ability) to do a full wort boil with kits usually.

    Also, how much volume are you expecting? 100g of corriander is a hell of a lot. For a 30 or 25L batch I would only use about 20g which is in a single Schwartz serving. Don't forget you need to crush the seeds with a mortar and pestle first. If you don't have one, a rolling pin with the seeds in a bad might do the trick.
    I also use orange, lemon or lime peel depending on what I want. I am partial to lime wits myself.

    Hi i did a similar kit mod recently with the coopers wheat Kit.

    20 mins with about 10 Litres
    Coopers wheat kit
    Coopers wheat LME
    10 gram of corriander seed(crushed with pin in bag)
    40 Gram of curacao peel
    700 gram clover honey
    10 gram cascade
    100 gram Dextrose

    No bag, just filtered everything out on the way into the fermentor and topped up to 19L. (I did not add any peel etc into the FV)

    Held at 19 Deg for 3 weeks and has been in the bottle for 1 week now It is already very nice, however i would have liked a little more of the orange/corriander flavor i was going for. I used the Coopers yeast.. i think it's OK and did ferment out nicely with no issues.

    If i ever try again (and this was my last kit) i will increase the amount of Peel and Corriander levels and use a liquid wheat beer yeast strain.

    turned out nice and quite similar to hoegarden, only thing i'd change was i added a full 28g schwarz jar of crushed coriander and i'd say that was a little bit to much,
    it was slightly over powering, prob 15g or max of 20g would be sufficient

    Just bottled the other day and had a sneaky taste last night. Tastes very good, like hoegarden but it is darker in colour.

    I am amazed at the benefit of using a specialist yeast (Danstar Munich Beer Yeast) rather than the kit yeast.

    I probably try the Brewferm Wheat Yeast next time with some honey at bottling time.
