I see that Easyjet are moving a number of flights from Gatwick (iirc) to Southend in April 2012. Mostly holiday flights, but also Amsterdam and Barcelona, which are key continental links, particularly Amsterdam. Luton also has 3 flights per day to Amsterdam.

With the 2 flights daily from Waterford to Southend and 1 flight (more or less) to Luton, there will be good connectivity between Waterford and northern Europe at least. Sometimes Aer Arann + Easyjet is competitive with Aer Lingus (out of Dublin) + bus/train/petrol to Dublin. Whether you drive to Dublin or Cork or take connecting flights out of Waterford can be a matter of taste, where extra waiting around in airports has to be stacked up against having to drive, particularly if your return flight arrives in late.
