    just wondering does anybody have any tips scone making? They're sometimes a bit doughy, i find it hard to get a nice consistency.

    When you're rubbing your flour in, lift the mixture high out of the bowl and let it drop back in. That gets more air into it, and might help. Otherwise, try posting your recipe and we'll check it out.

    My scone tip is to use a scone cutter, and push it straight down when cutting out the scones, never twist it, because the twist will distort your scone as it cooks :) Other than that - as Faith said, mix lightly, and don't squish the mix much - rolling out should be done with a light hand.

    To me scones are the hardest thing to bake and get right.
    The less mixing, handling and rolling out you do the better.
    Also preheat your oven even if it is fan oven

    Its hard to know exactly how much milk to add.
    The dough should be soft enough to be slightly difficult to handle.

    Here is the recipe I use.Its very easy and the results are always perfect.

    300g flour
    pinch salt
    1 heaped tsp baking powder ( very heaped, I use a little more)
    60g butter
    20g sugar
    140 ml milk
    1 egg


    Sieve flour, salt and baking powder. Rub in the butter. Mix in the sugar.
    Add the beaten egg and milk and mix to a soft dough.
    Turn onto a floured surface.
    Knead just enough to shape into a round. Roll out to 2cm thick and stamp
    into scones.
    Brush with egg wash. Make sure that the egg wash is on the top only and
    doesnt dribble down the sides.
    Bake at 200 for about 12 minutes.

    Absolutely, they need to go into a hot oven .
