Pitta filling suggestions

    Hi

    I am looking at replacing boring sandwiches for pitta's with various fillings, this is for lunch at work with limited facilities...any suggestions??

    I'm assuming you have access to a toaster. I'd go for:

    Hummous & rocket
    Chorizo & scrambled egg (scramble the eggs in the morning, or do them in work if you've a microwave)
    Pastrami, swiss cheese & pickles
    Wafer-thin turkey, cranberry sauce & brie
    Mixed Branston pickle & grated cheese, crumbed ham.
    Tuna, cheddar cheese & tomato

    The possibilities are endless, really. Pick up a couple of toaster bags (you can get them in Aldi) so you can toast your pittas with the fillings already in them, it makes all the difference.

    I find paprika really nice on the wafer-thin turkey.

    I like lamb meatloaf sliced very thin and chopped lettuce and tomato with a little creamy cucumber salad dressing to moisten it

    I went for this today at lunch, with peppers and onion in there too.

    Very very tasty! I'm going to get serious mileage out of the toaster bags. They're great.
