Can anyone share a good recipe for a plain cheesecake? Need to make one for next weekend and used a recipe I found online for one before and it turned out really heavy and manky.

there's a nice baked one in Delia Smith's cookery course. If you want it lighter you should separate the eggs, whisk the whites and fold them in just before you put it in the oven. Also bake it in a ban marie (water bath).
