making your own sausages

i am going to experiment with making my own sausages, going to buy the mincer and the stuffing machine etc and get cracking with it.

has anyone here ever made them before and be able to share any good recipes?

also anyone know any good sites for equipment or ingredients.

Fair play to you. I don't have much advice other than get stuck in as I've never gotten a sausage grinder as much as I'd love one.

The only advice I can give is general advice that I try to follow (usually unsuccessfully) whenever I start anything new, like when I started making my own pizzas or curries.

Start with one meat and one filler, e.g. pork & sage, beef & barley etc.

When you have the right combinations in the right quantities then try mixes of meats and fillers.

Also don't rely on remembering what you've tried, write down your recipes in a copy or on a web site like allrecipes.com (I thought of advising you to keep a "sausage log" but that read wrong on so many levels, sorry).


Best of luck, I think you should keep this thread going with whatever you try. Whether it turns out not so good or great.

Saw a cast iron hand mincer, the ones that bolt to a table, in debenhams today, reduced to €27 from ~€42. This was in blackrock dublin

i have done this a few times, bought a strong mincer & proper stuffer,

i am still trying to perfect them, going for a finer mince, more mixing & a little more salt next time.
