    Tesco have whole, dried adobos in their Ingredients range and Fallon & Byrne (Exchequer St., Dublin) have really good Mexican adobo in jars. They're in examinership, but I think they're still open.

    The mexican place in the Epicurean Food Hall sells Chipotle en Adobo also

    Fallon & Byrne are definitely still up & running :)

    You'll also get chipotles en adobo in Azteca on Lord Edward St.

    I just bought 200g of chipotle chillis on eBay to make my own adobo. I made it before (using the Tesco Ingredients chipotles) based on the ingredients listed on the side of the jar that I bought in Fallon & Byrne's and it turned out very well!

    The ingredients are water, vinegar, tomato puree, chipotles, onion, sugar, salt, garlic, herbs and spices. Simmer them all together a while then blend.

    Have to make Mr. Sparks' chilli again soon!
