They only English language guidebooks on Via Ferratae in the Dolomites, that I know of, are the ones by Cicerone.

Couple of other things about the Dolomites

-flying into Munich, and getting the train, (and local bus) down, is often an easier option than flying into Venice and driving.
-I would recommend Corvara as a place to stay, nice spot and the centre of most of the local bus routes.
-you can hire the gear locally, rather than buy it here.
-don't leave it too late in September, as the refugios and ski lifts start to close down towards the end of the month.
-the locals all speak Italian, (and often have English) but their first language is usually Ladin ( or German), a couple of phrases go a long way
-can't advise on the Via Ferrata, as I only did the very easy stuff

You can summit Marmolada by via ferrata, should appeal to you!
