Perhaps use custom posts for your products (http://codex.wordpress.org/Post_Types) maybe with a custom template to display the products (http://codex.wordpress.org/Template_Hierarchy).

You'll need to keep track of the users shopping cart, either in the database or in a session variable and then provide them with a cart page so they can review an order and checkout. The checkout form is generated server side and when submitted starts the PayPal checkout process, redirecting the user to PayPal for payment.

The PayPal side is well covered by tutorials (look at https://cms.paypal.com/us/cgi-bin/?cmd=_render-content&content_ID=developer/e_howto_api_nvp_NVPAPIOverview to get started) and they have sample code on their developer site. The PayPal sandbox allows you to test the whole lot.

There are lots of little potential gotcha's that you'll come across, but it is a very good and educational programing exercise.
