As the title says, I've a small piece (350g ish) of raw pork fillet left over, and wondered what to do with it?
    Any nice suggestions?

Stir fry with yellow peppers and oyster sauce?

Do you mean a narrow piece like pork steak? If so you could slit it and flatten it out and marinate it in this, then roast it:

2 tablespoons of light soy sauce
    1 tablespoon of oil
    2 tablespoons of honey
    1 tablespoon of wholegrain mustard
    1 clove of garlic, crushed

You can add sliced or dried chilli and grated ginger too if you like.

Get some pine nuts and lightly toast them.
Add them to a bowl containing two sausages with the skin removed.
Throw in some chopped coriander and shredded ginger.
Add a dash of chilli sauce and mix together.

Slice the fillet down the centre and then flatten.

Add the mix to the centre of the fillet and then wrap the fillet in a few slices of prosciutto or parma ham.

Wrap in tinfoil and cook in the oven for 45mins. :)

Pork...stuffed with pork...wrapped in pork. :pac:

(Best served with a chop and a few slices of white pudding.)
