Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

Doughnut recipe- frying pan

    Has anybody successfully made doughnuts in a frying pan? I would greatly appreciate any recipes used. All I can find are weird American recipes- some of which say to include potato? Would love a standardised one.

    Doughnut (same recipe as doughnut cream buns)

    450g Strong flour
    55g sugar
    1 teaspoon honey
    6g salt
    45g butter room temperature
    20g milk
    180g/ml water
    14g instant yeast ( or 28g fresh yeast)
    1 egg

    • With a dough hook fitted to a mixer, mix all ingredients to together at low speed, once the dough has started to come together, increase to medium speed and mix for 7 minutes
    • Cover with cling (touching the surface of dough) and allow the dough to rest and rise for approx one hour

      Divide the dough into 8 pieces and allow rest another 10 minutes before shaping.

      Shape into rounds

      Allow the dough to prove on a prepared tray until almost double in size,

      Deep fry in a deep-fat-fryer or to deep fry on the hob- add vegetable oil (though peanut oil is best- it has a higher flash point) into a pot - the oil should come up to at least half way up the side of the doughnut. Heat the oil over medium high heat, when hot, add the doughnut. When one side is nicely browned and cooked, flip it over with the aid of a spoon and continue to cook the other side. Remove cooked doughnut from oil and drain on kitchen paper, then roll it in sugar.

      OR

      You can shallow fry on both sides for about 1 minute per side in some hot oil in frying pan and then finish cooking the doughnut in a preheated oven set at 170C for about 25 minutes - when the doughnuts are out of the oven, pour some sugar syrup over the hot buns for a beautiful sweet crisp skin. Then toss in sugar to coat.

      Syrup
      • 180g sugar
      • 210g water
        Bring sugar and water to the boil. Remove from heat when sugar is totally dissolved.

    Try Sticky Sticks by The Fabulous Baker Boys. These are not technically doughnuts but they taste just like the fresh hot doughnuts you get at funfairs etc. They are so easy to make and no waiting for dough to rise etc. And most of all they are delicious.

    Sorry have no idea how to post a link so you will have to look up the recipe on the C4 website under Fabulous Baker Boys or maybe someone will put up the link.
