    How desperate are you?

    Take the leaves from the heart of a head of celery - the greener ones. Pound in a pestle and mortar with enough sea salt to make a wet salty mash. It should be a mound of green wet salt. Spread it on a baking sheet lined with silicon paper and dry in a low oven until the moisture is gone. 80 to 90c for an hour in a fan assisted oven, but it all depends on the quantity. This should give a bright green celery salt.

    Other methods dry the leaves first - less time, 10 to 20 mins at 100c, but the leaves will discolour.
