If I were doing that, I’d usually reserve some cheese from the omelette mixture to put on the top
I’m not mad about sliced chorizo: much prefer the chorizo sausages. However, you can get rings of ready-cooked chorizo, which are nice. They probably still take time to cook, though. This is why I have omelettes for supper or weekend breakfast. I usually have a speedy bowl of porridge or homemade smoothie during the week.
