Help with this list of ingredients to make something tasty

HI All, Hoping you can give me some ideas on what to make with this list, thats in the fridge for tonight: 1 x Leek 1 x carrot 5 over ripe tomatoes 1 x Courgette 1 x Yellow pepper dont want to make a soup - need a veggie dish - have usual spices and other stuff lying around cupboards if needed. Thanks

Like the idea of roasting it all, just didnt think Leeks roasted too well for some reason..

sure might give it a try as i'd have the oven on for something else anyway.
