Use pizza dough. Make sure ingredients are reasonably dry, i.e if you're using fress mozzarella let it drain in a collander for a few hours.

It helps to keep the tray in the oven while its heating. This makes the dough at the bottom cook quickly and stops it from getting too wet and splitting.
