I've noticed that some sell it at a premium (e.g. €10.50 for €10 credit), how much do the shops make if they're selling it at face value?

As low as 3%. The issue with the extra came about when the cost price to the shops went UP but the recommended selling price stayed the same. It was 10% before the phone companies put up the cost price.
If a can of coke costs more wholesale, the retail will also go up. Phone credit SHOULD be no different.
