Everton do have a great midfield, your point is still very valid but if Carrick was in there for Scholes I'd say there'd be a huge improvement.

De geas been our best player so far. Sooner the better we get our defense back all over shop bk there at times. Midfield also be overrun lot of passing but not to the right areas the pitch. Can buy all attacking players in world but need a base first.

The lack of a defensive mid is United's main problem. Scholes is playing deep but doesn't have the legs to chase down players and Cleverly isn't a good tackler either.
