Courgettes

A friend has kindly given us a beautiful basket of veg from their garden, amongst them five beautiful looking large yellow courgettes. I normally make a nice ratatouille but seeing as we have so many am looking for some other ideas on what I could do with the remainder, any ideas fellow foodies?

Not forgetting courgette fritters.

Griddled sliced courgettes, seasoned with salt, black pepper, lemon juice, fresh mint and olive oil. To be eaten warm or cold. To top a pizza with...

I've started adding them to curries recently. They seem to absorb the flavours really well.

Love using courgette, two of my favorite ways to cook are parmesan zuccini or a gratin. They're such a nice veg, making them the main part of a starter would be the best way to enjoy fresh homegrown ones. Carrot and courgette is a good soup as well.

Do a bulk cooking of Moussaka but use Courgette instead of Aubergine.
Good way of using then up, and having some homemade frozen dinners on hand.

Courgette and ricotta bake is pretty nice as a side dish.
I made the recipe below the other day and twas yummy.

For some reason he doesn't mention that he also poured some olive oil over the courgettes with the salt/garlic/etc to help coat them with the seasoning.
