Why does Real Fire-cooked food taste so good?

    For example, real fire BBQ using charcoal compare to gas cooked. Any magic in there?

    I there'd be two factors.

    One is that, in general, with a charcoal BBQ food is often on a grill, so higher temperatures are directly applied, which would help with the Maillard reaction and caramelisation where relevant (link for more info. With a gas fired BBQ, the food is often heated on a plate resulting in a lower heat distributed more evenly.

    The second is that the smoke from the charcoal fire adds some flavour, especially to meats.
