How do you like your steak cooked?

    I like mine medium rare, I find rare makes the steak a bit too jelly like, whereas medium makes it dry and tough. For me medium rare is the sweet spot of moistness and texture.

    Medium does not make it dry and tough, it makes it just right.

    Hence the name, medium.

    Rare.

    Its a chore having my grandmother over for dinner when we're eating beef.

    She comes from the mucksavage generation that overcooked the ****e out of everything. She keeps saying little snide comments "oh sure that's not cooked at all".

    The other problem is butchers giving you these tiny little midget steaks which require far less cooking. I still reckon a lot of people haven't a clue how to cook steaks.

    Rare-Medium is a matter of taste. Anything above that and you don't deserve to be ruining a good steak.

    Spot on. A well done steak is a ruined steak imo. Medium or medium rare is the only way to appreciate a good piece of beef.

    BTW, Heston Blumenthals (sp?) way of cooking a steak is awesome. (ie pan scorching, turn every 15 seconds for around 3 mins).

    EDIT: for the blue eaters... do you not find it's a touch too chewy?

    I had a friend come home one night and decide the best thing he could do was stick a steak in the microwave for 20 minutes and then eat it.

    He got a smack for crimes against steak.

    On the rare occasion i'm out in a restaurant i will order my steak medium rare but when i'm at home and cook steak i cook it rare. It tastes so much better when its juicy and pink. I eat steak for my Christmas dinner instead of turkey.

    Medium, I find anything less and its cold in the middle which I don't like. I know plenty who wont eat it unless its well done or even very well done.

    My mam and sister always take theirs well done, my mam has even sent steaks back in restaurants for not being well done enough.

    It makes me weep.

    Medium is what I ask for in a restaurant. Seared on the outside, brown for the outside fifths, pink for the closer-to-the-middle fifths, and red for the centre fifth. With garlic spuds - always.

    My mother cooks steaks in a George Foreman Grill until well done, then covers it in gravy and serves with dry new spuds and boiled vegtables. Possibly the worst way to eat steak, dry and chewy. I actually detest it.

    I like mine medium-rare, dash of pepper sauce, some handcut oven chips and a fresh salad.

    I will attempt it like this - Take steaks off pan to rest. Keep pan on the heat. Take a swig of JD for luck. Add a good slug to pan and de-glaze it of all the yummy steak bits. Should I light the booze? Add a bit of cream.

    I like mine cremated. Not just well done, I'm talking about it coming out stuck to the dead hand of the Fukishima worker who brought it inside the nuclear reactor to cook it.

    I would amend it by adding that when you take a tablespoon of Jack out of the bottle, pour a double over ice into a glass and set beside you for the meal (and leave the bottle)

    Medium rare. And this is actually the optimum way to cook some cuts, such as ribeye. Foodies would have you believe rare is best for every cut:
    A good steak should be cooked to the level to which a good vet could have it mooing again.

    Flatten the steak out a little bit, some rub herbs in and drizzle a small amount of proper extra virgin olive oil over the steak. Allow to stand for 2-3 minutes and then place on a hot griddle pan. Sear each side for 2 mins and brown the fat! Remove for the pan and rap in tinfoil for 5-10 mins!
    I make cooking steak very complicated!:)

    So yeah medium rare for me!:D
