christmas cocktails

    so far i have made

    1: hot butterd rum
    1 jigger dark rum (old sea dog)
    2tsp dark maple syrip
    2 cloves
    1/4 tsp mixed spice
    1/4 tsp nutmeg
    sprinkle nutmeg
    knob butter
    top up with hot water and let infuse for 3 min
    2: eggnog
    3 egg yolks

    1/4 cup sugar

    1 pint milk
    <li itemprop="ingredients">
    1 cup cream
    <li itemprop="ingredients">
    3 jiggers dark rum
    <li itemprop="ingredients">
    1 tsp freshly grated nutmeg
    <li itemprop="ingredients">
    4 egg whites

    beat egg whites and cream sepratly
    whisk egg yokes with sugar and rum
    mix in cream and egg whites.
    usuall warning re raw eggs and food poisioning i use pasturised egg whites
    what else do you folks have? in particular i am looking for great mulled wine recpie or better than above recpies.

    :( I thought it was pirate speak and now I'm disappointed.

    "Get me a Jigger o'rum ye scurvy land lubbing daaag" see it works.

    I've never tried egg nog, doesn't it have a raw eggy taste?

    My fave christmas/winter drink would be mulled cider. It's lighter than mulled wine, which I love but could only have a glass of.

    This is the original recipe I use, from BBC food.

    Ingredients
    3½pts/2L dry cider or fresh apple juice
    2 apples studded with cloves
    4-6 cinnamon sticks
    5-6 allspice berries
    zest of 1 orange
    dark rum (optional)
    slices of apple for garnish

    Preparation method
    Combine all ingredients in a large saucepan and simmer gently for 30 minutes - do not boil.
    Transfer to a heatproof bowl and ladle into glass mugs. Garnish with apple slices to serve.

    However I'm not a huge fan of cloves so I only use 3 or 4 cloves whereas it seems there should be more. The rum here says optional, I would say it's necessary, it makes such a difference.

    I've not tried this, but I got a big bag of cranberries yesterday so I'm going to make this during the week.

    Ingredients

    1 cup fresh cranberries
    1/4 cup sugar
    2 tablespoons water
    1 piece fresh orange peel (2-by-1-inch)
    3 cups vodka


    Directions

    In a small saucepan, heat cranberries, sugar, and water until the sugar dissolves, the liquid begins to turn a light-pink color, and the cranberries just begin to pop. Pour the cranberries and the liquid into a large glass jar; stir in peel and vodka. Cover, and let stand at room temperature at least 3 days or up to one month. Strain before serving.

    Hot Snowball

    1/5 gill Cinnamon Schnapps
    1/5 gill Kahlua
    Hot Coffee

    Combine in a coffee mug and top with whipped cream

    Candy Cane

    Hot Chocolate
    1/4 gill Peppermint Schnapps
    1/6 gill Baileys

    To a cup of hot chocolate add one shot of peppermint schnapps and top with Baileys

    Christmas Tree

    1/3 Grenadine
    1/3 Green Creme de Menthe
    1/3 Baileys

    Layer in a pousse cafe glass / liqueur glass

    Christmas Juice (non alcoholic)

    One Part: Ginger Ale
    Two Parts each
    Apple Juice
    Cranberry Juice
    Ginger Ale
    Sugar To Taste

    Mix everything except the ginger ale in a punch bowl, add ice cubes and top with ginger ale

    Where did You find the cranberries? We're they expensive?

    I got them in a warehouse shop in Carlow on the hacketstown road, I can't remember the name (but can find out if you like). 340g for €2.

    Does anybody have a recipe for mulled wine which I can make up cold for heating at a later date. I'd like to do it and bottle it nicely for a christmas gift.

    This is my favourite recipe

    1 Bottle Red Wine (use a decent one but don't go mad)
    1/4 Bottle Brandy
    1 Bottle Red Lemonade
    Cinnamon Stick(s)
    12 Cloves (approx :))
    1 Orange
    1 Lemon
    1 Inch Root Ginger
    Sugar if desired

    Stud the orange and the lemon with cloves and simmer in the lemonade along with the cinnamon sticks and ginger and sugar if used for five-ten minutes
    Add the wine and brandy and bring back up to temperature for a further five minutes
    DON'T LET IT BOIL!!

    This can easily be strained and bottled for reheating

    What I like to do just before serving is sprinkle in some grated orange and lemon peel
