I have no butter...

    But I feel like baking. Apart from a fatless sponge, can anyone think of anything I can make? All the shops are closed (weird UK laws) so I can't buy anything. I have basic baking ingredients, but no chocolate or berries or anything like that.

    Go to bed, you will regret baking without butter, your just wasting the other stuff.

    Or borrow from your neighbour if your really hooked.

    Apple sauce can be used in some recipes as a replacement for butter.

    Yeah, you're probably right. :(

    Some brownies use oil as the fat instead of butter

    (Haven't tried these so can't vouch for them unfortunately, but they look similar to the sort of thing you'd get from one of those Betty Crocker packet mixes, had a quick look at the ingredients here and there doesn't appear to be any butter in them)

    It's a bit late, but I have a lovely recipe for carrot cake that uses oil.

    You could make a simple icing insead of cream cheese if you like.

    And from now on you should know to stockpile butter (stuff keeps for ages if wrapped anyway)

    I didn't. I took the good advice to ignore the urge. Although carrot cake was a great suggestion!

    Stockpile a jar or two of apple sauce as well, it's really nice in some things like cupcakes and brownies and keeps forever.

    tea brack has no butter. The Ballymaloe recipe is awesome.

    Also carrot cake.

    I have had some nice chocolate cakes that use coffee and oil, no butter.
