    These little baskets are great keepers, can be make up to a month ahead, stored in a air tight container,

    makes 12,
    4 slices of white or wholemeal bread, I do a couple of batches of each, and use difference cutters for fillings
    1/2tbsp melted butter of olive oil
    shallow bun tin
    preheat oven to 180c
    remove crusts
    roll out bread with rolling pin
    brush with butter
    stamp out 3 pieces from each slice of bread
    put buttered side into bun tin, pressing firmly down
    bake for 12-14 mins till crisp and golden
    remove and cool on wire rack
    fillings

    crab,
    200g white crab meat
    1.5cm fresh ginger peeled and grated
    grated zest and juice of 1 lime
    2 spring onions finely chopped
    1 tbsp chopped coriander
    1 red chilli deseeded and finely chopped
    3tbsp mayo
    salt and pepper
    can be made ahead and chilled till needed with out chilli
    mix together crab,lime zest and juice, mayo, coriander,spting onion, and seasoning, when ready to use, fill each basket and sprinkle with red chilli

    soya bean
    100g of cooked soya beans
    1 shallot finely chopped
    1 garlic clove crushed
    1 tbsp olive oil
    small bunch of basil
    salt and pepper
    can be made ahead and chilled till needed, leave some of basil for garnish
    drain beans and put into food processor, add all the other ingredients blend till smooth, check seasoning,
    when ready to use, fill each basket, and top with basil leaf

    chicken,
    1 chicken breast cooked skin and bone removed
    2tbsp mayonnaise
    1 tsp chopped tarragon, plus 12 leaves for garnish
    1 tsp wholegrain mustard
    1 tsp lemon juice
    salt and pepper
    can be made ahead and chilled till needed
    shred the chicken into small pieces,
    in a bowl, mix, mayonnaise, tarragon,mustard and lemon juice, season to taste, add chicken and mix well,
    when ready to use,
    fill baskets and top with tarragon leaf,

    roast beef, goats cheese, and smoked salmon are others that I do,
    but this post is long enough :o
    you can use any filling of choice, I tend towards things I can make in advance so less rushing around for me, :)
