Never seen anything bar liver in most of them, just go in and ask or phone and order it, im sure they could get it.

Wikipedia: The word "sweetbread" is first attested in the 16th century, but the etymology of the name is unclear.[4] "Sweet" is perhaps used since the thymus is sweet and rich-tasting, as opposed to savory-tasting muscle flesh.[5] "Bread" may come from brede 'roasted meat'[6] or from the Old English brǣd ('flesh' or 'meat').

Tormey's in Galway Shopping Centre would be worth a try.

I'd say Colleran's in town, McSully's in Renmore, Loughnane's in lower salthill or T Feerick's on the newcastle road would be your best bet.
The Butchers in the shopping centre beside tesco is actually fairly pants, insane prices and their beef is pretty average at best.

Any butcher will get them for you by the way, you'll probably just have to order them in and they may have a minimum spend on them.

Phone around a few and go with whoever gives your the best price.

In fairness, they're so busy producing meat that they don't have much time to spend on their beer-making operation

    ;)

I usually find McCambridges has a far superior beer range to most butchers though.;)
