finish for oak saddle board?

Can you please advise on good finish for oak saddle boards - only have a saddle on a double and single opening down stairs. Currently having the doors, frames, architraves and skirtings painted in an off white and needed to replace the saddles anyway so plumped for oak to match the floor as will be the only wood exposed - saddle is bridging the divide between oak wood floor and tiles and necessary unfortunately. Professional painter doing the rest of the decorating but as I didn’t foresee this job and as I assume it will require several coats of whatever and sanding in between, going to tackle ourselves - good idea/bad idea? Wooden floor, wide plank and down for about 6 years now and in good nick so not touching it so don’t imagine the saddles will match completely but will be better than red deal as was the alternative. What product would you suggest...want to retain the oak look so nothing stained. thanks
