It depends on the University/College but DCU is quite strict. From there website here

"Candidates applying on the grounds of mature years must apply through the Central Applications Office (CAO) by the 1st February. The late application date of the 1st May does NOT apply in the case of candidates applying on mature years."

Also, not all colleges go through the CAO format.

For example Trinity College accept applications seperate from the CAO for mature students and so does National College of Ireland.

I'm not sure about the other colleges, but your best bet would be decide (if you haven't already) all the courses you would be interested in doing, and then whatever university / college they are with, email the admissions office and ask them if they will still accept applications. (usually "Admissions@what-ever-college.ie", but just google "admissions office email Trinity / UCD / whatever.." to get it)

Some will still accept applications, some wont, but definitely worth a shot banging around a few emails to find out and be ready to send applications that day if needs be.

Careful with stating that about Trinity Jackass. As far as I know, most courses are through the CAO but you have to send off a seperate application form to Trinity.

UL is direct application, unless you're applying for nursing

Read the CAO handbook and the uni's prospectus. Contact the college admissions office to be 100% sure of the application procedure.

Some of the smaller colleges/courses will take late applicants.
