Once he retires in real life or announces it (a la carra) his game status changes to have a RTD black mark beside it. This means you can no longer sell him or trade him and that once he retires (or in some tragic cases dies) in real life he disappears from the game and you get back his value (judged by what SM decides his cash value at the time is). Sometimes he magically reappears as a Free Agent 8 months later allowing you to pluck him from obscurity. I'm looking at you Paul Scholes.

Pretty much, once bids are accepted no new bids can be made. So as long as theres no other bids then yes

It depends. It can always be stopped if it's AI at an Unmanaged club (instead of External) by a new manager coming in. If there are multiple bids then they'll all get provisionally accepted and the AI will proceed with the best one (straight-forward if it's just cash, not so much if palyer swap/s are involved). It's not always plain sailing though. If the player in question is very strong and you are bidding is not high profile then the player can refuse to sign. I tried to bring (the real) Ronaldo to Dundalk a few years back and he wouldn't even get on the flight (chairmen had agreed the deal and all). Last year in another of my leagues Messi refused to move to Torquay. Finally if the dealings done are dodgy or seen to be dodgy SM will (if it's reported and there's substance to it, as opposed to just sour grapes) investigate and if they judge it dodgy reverse the deal (even after the player has traveled all the way to Scunthorpe)
