Go with Carlow, and maybe do a weekend meet up instead of just one night.

The pubs in Kilkenny turn away large groups, particularly males.
They just don't want the stag type crowd any more.

I propose a Nationwide Boards nacker drinking session.
Everyone heads to their local field, some pallets/firelogs, heap o cans and a few naggins.
Cans are consumed, pallets are ignited, naggins be necked.
Everyone streams it live on their phones and all the streams are synchronised to a central chatroulette type interface.
Sure, it will probably end in an disgusting mossaic of drunken boardsies exposing themselves online, but would be fun until then.

I know May-ish was suggested as a timeframe on the first page so it might be worth keeping in mind that the last weekend in May is stretching over into June so it's actually the June bank holiday weekend. So if it were picked as the date it would be a 3 day weekend so more time for travelling and all that, and Kilkenny would be rammed because of the Cats Laughs.
