Good tips on watching the competition?

In any business how does one 'watch the competition'? Does it depend on what type of business it is or is there certain tips to keep up with. One hypothetical example is say; a new supermarket opens with more hours than the supermarket that has been in the town for years then that supermarket keeps up with its competiton…

One hypothetical example is say; a new supermarket opens with more hours than the supermarket that has been in the town for years then that supermarket keeps up with its competiton by doing just as many hours.

I supposse advertising is a key factor too but some things fail despite the amount of advertising they do.
