Can I drive this on a standard full Irish car license ?

The Rental Company says C1 for the bigger ones not this one.
Is there another license category that this falls under ?

Yes if you look at your licence is show that you can drive up to 3500kg gvw and 9 people including the driver.

Maximum permissible total weight: 3499 kg = Yes (Category B Licence)

Category C1 Licence only required for over 3,500 kg to 7,500 kg maximum permissible total weight (GVW)

You should really check to see what the unladen weight is, so that you can calculate what weight you can take on board before it becomes overweight.
    100 litres fresh water - 100 kgs
    2 average adults - 150 - 160 kgs
    50 litres waste water - 50 kgs
    Children's weights
    Gas cylinders
    Fuel
Outdoor gear (tables, chairs, BBQ etc)
Clothing etc (remember a suitcase size and weight from flying)
    Food

According to this it can take a 667kg payload

It's the GVW on the VIN plate which counts for the Driving Licence.
A Category B licence only allows a vehicle not exceeding 3,500kg as recorded on the VIN plate and registration documents to be driven.

For example, if a vehicle is recorded at 3,850kg but weighs less than 3,500kg when in use (partly loaded), it still can't be driven on a B Licence.
