Domain transfer from 1and1: mxrecords

Story time!
I transferred a domain from 1and1 (owned by someone I know) to blacknight. The Registered Domains page says that the DNS are still 1and1 servers. However Google (and other network tools) tell me that the MX records are also still with 1and1 but I have no way of changing those.

This leads me to believe that I don't actually have full control of the domain like I would if I had purchased it through BN.

How can I sort this out? The website itself is hosted on university servers if that makes a difference. I also have a full copy of the original DNS records before the domain was transferred.

Your domain <snip> is still pointing to 1&1's nameservers. You can update your nameserers by following the steps from here:

Once your nameservers are pointing to blacknight, you can then update your MX by following the steps from here:
https://help.blacknight.com/entries/22941608-DNS-records-in-cp-blacknight-com
