Making Ice Cream

Just thought I'd share with some people on here a great blog about Ice cream. Its by Kieran Murphy of Murphys ice cream and there is a load of excellent recipes in there to check out.

I made some ice cream (using my lidl ice cream maker) on sunday and it was utterly delicious. Who knew how much double cream it takes to make it!!!

I've avoided making the base from egg yolks and tend to use either double cream and milk or cream and condensed milk as the base.

The base from here works great and you can add whatever - smashed oreos works brilliantly.

I'm surprised he's advocating the use of vanilla essence in the butterscotch ice cream rather than extract. Or pods... I love using all double cream and no milk, no ice cream maker needed. Too much of it will kill ya though...

I used double cream and extract instead of essence. The interesting part for me is making the custard, holding the temperature about 72 degrees but not above 76 for 3-5 minutes.

yeah sure its not good for you, but it tastes great!

Let us know how that one goes, looks like a nice flavour combo! I've never used condensed milk as I'm always afraid it'll be too sickly sweet!

I'll confess to a taste or three as I was transferring from churn to container.
The sugars in the condensed milk more than compensated for the sourness of the natural yoghurt.
Definitely not too sweet and initial thoughts are the condensed milk and yoghurt is better than condensed milk, cream and sugar - probably healthier too.

Tesco have that extract, I think I paid about €7 for the same bottle a month or so ago....

This is the base I made my gianduja ( Nutella) ice cream with..It's a hit with everyone!
