No, you're running a hygiene risk keeping it open.

It's usually a few months, maybe a year, but I've used yeast that's over a year out of date with no problems.

You can. Keeping the packets in the fridge helps too.

    thanks

what if i seal it airtight with clingfilm ?

does it basically have to be used when you open the packet?

Are you doing small batches or something in terms of why you are using partial packets of yeast?

i was hoping to start small maybe 5L or less in case i mess up

although i might scale up to the 25L drum

I've always used a whole packet in 5L batches and never had a problem.

Use a whole packet per batch, whatever the size. Once the sachet is open it's not sanitary.

    thanks

so all the cleaning and sterilization of equipment involved in homebrew?

is that due to health risks or to improve the taste of the 'finished product'

    or both

    thanks

The second one. There aren't really any health risks (apart from the alcohol). If a brew goes wrong because of bad hygiene it can taste of TCP, vinegar, baby vomit and a whole host of other off flavours that aren't harmful but are disgusting.
