Buckwheat Recipe

    Hey all,

    I'm looking for something to do with Buckwheat - note, not Buckwheat flour.

    does anyone have any ideas - it needs to be doable in about an hour including prep and cooking.

    I have most of the other kitchen staples available or can go and get them. I'm not really in a position to get anything else too specialised.

    No chilli is also a stipulation.

    Bumping this please. Bought a bag of it out of months of curiosity!

    Not pancakes please, that seems to be the main recipe I'm finding online!

    Maybe try googling "kasha recipes" - I'm pretty sure that's what buckwheat is mostly cooked into in Eastern Europe, so you might be able to find some interesting local recipes :).

    Is it buckwheat flour?

    I dreamed I made buckwheat noodles last night, which must have been after reading this thread!

    So you could make noodles :D

    I usually just boil up a portion of roasted buckwheat groats for about 10 minutes (it gets very mushy if you leave it too long) and serve it on the side (as my carb) of whatever I cook - served the same way you would with bulgur wheat or cous cous basically. It has a lovely nutty flavour which I like :)

    I made nori using bulgar wheat, so that might be wort a try at some stage.
    I have never used buckwheat, but it looks like it has a very similar texture

    It worked very well, but the bulgar was a little too dry, needs to be mixed maybe with a little sushi rice to give it more hold.

    I've struggled to use the buckwheat I bought.
    Thought I could just use it in place of pearl barley or quinoa but it seems to have a tendency to go mushy if cooked for anything like the recommended time.

    I love to use buckwheat flour, though - gives a lovely flavour.

    If it is mushy/sticky, it might be better for the nori idea than bulgar - just leave it cool down for a bit
