Culinary arts books?

Hi all I intend on applying for culinary arts in Athlone in 2014 as a mature student. Just wondering is there any books that would be worth buying now for the course(areas that are more difficult).Also is there anyone on here that applied as a mature student,how did you find the interview process etc.?
