From scratch, or the ready made just add eggs and water mixtures?

    Rich Chocolate Cake (very brownie-ish)
250g dark chocolate (I use Bourneville or Aldi basic dark chocolate) and 150g butter (not margarine), microwave for 2 minutes.
    Stir in 150g sugar.
Beat 3 eggs and fold in to the chocolate mix (until just combined, don't overmix).
Fold in 60g plain flour til just combined.
Pour into a lined tin, approx. 7 inch square or 8 inch round (the size isn't crucial).
Bake at 180 degrees for around 25 minutes until just set (should still have a wobble).
    Cool in the tin.
Once cool, store in an airtight tin for up to 2 weeks (if they survive that long)
Note: preheat the oven, weigh out all the ingredients and line the tin before you start: this is a quick one!

Fairy cakes, or cup cakes if you want to make buttercream to go on top.

    225g plain flour
    225g butter/marge
    225g caster sugar
    4 eggs
    1 teaspoon vanilla essence
    1 teaspoon baking powder

Start by mixing the butter and sugar in a bowl until well combined, add vanilla, add the eggs two at a time and mix well (sometimes it can look a bit split but don't worry), add the flour and baking powder give it a mix until it all comes together. Try not to over beat.
Divide among paper liners in a bun tray and pop into oven preheated to 180C/GM5. Usually take 12-18 mins, until a cake tester (or piece of spaghetti) inserted into the centre of a cake comes out clean.

Decorate by chopping the tops off and sandwiching some cream and jam in the middle, sprinkle with icing sugar.

    Most importantly - enjoy!

    • 2 eggs, beaten
    • 120ml buttermilk (or milk)
    • 60gms melted butter (microwave 1 minute)
    • 200g plain flour
    • 100g caster sugar
    • 1 teaspoon baking powder
    • 1 teaspoon bread soda
    • 1/2 teaspoon salt
Simply mix the wet ingredients into the dry (don't beat, just barely stir together) and use a potato scoop to put the mixture into 12 large muffin cases (or use silicone pans). Bake at 200c for 20 - 25 minutes.

These are very easy to make - no mixer involved - and the measuring of ingredients, beating, melting etc can be divided out to all involved. You can ring the changes by adding dried, fresh or frozen fruit, walnuts, chocolate chips, grated carrots etc.

    I've used this recipe:
    http://allrecipes.com/recipe/scottish-shortbread-iv/
and covered the top in galaxy chocolate and it was great.

I only made half the recipe and cut them into shapes using cookie cutters.
