Off-topic but the Gatwick sprint happens with EI too. You'll be in the business lounge and the flight will go from "Expected nn:nn" to "Flight Closing" with no stages inbetween. A mad dash later and you're in a massive queue to have your ticket and passport checked.

The mis-named "Easyjet" has a problem with boarding timing as well. Typically they start boarding outgoing passengers as soon as the incoming aircraft lands, keeping them in confinement in what are often very hot and humid air bridges for half an hour or so, while the incoming aircraft empties and is "cleaned". With the idiots who paid a premium for "speedy boarding" spending the longest time in this hothouse jail.

If one is in a lounge and plans to arrive at the gate at departure time -10' - they often turn on the "final call" indicator, causing a mad dash. Vueling manages it somewhat better - the advertised gate time of 30' before departure is qualified by a 10' deadline for gate closed.

Another version of this is the "must be at the airport two hours before the flight departs" technique employed by some Irish airlines, and the Dublin Airport "Authority". This needlessly causes long check-in lines hours before a flight is due to depart. Other airlines seem to achieve a more balanced passenger arrival pattern, which leads to shorter queues and less disgruntled PAXs.

I arrive early at pleasant airports with refreshing high quality lounges and good shopping.

I do a JIT (just in time) arrival at Irish Airports with their crap lounges, and totally uninspiring, over-priced, downmarket shopping, and slapped together dining experiences.

Two hour in advance threats don't work with everyone.

In any event the biggest threat to airside shopping is slow "security" checks and alarmist "final call" boarding messages issued 30 minutes before the flight is due to depart.
