pork in lettuce

I want to try those pork in lettuce starter you often get in the Chinese, the Iceberg lettuce with a minced pork filling, a lot of the recipes I have looked up are different so has anyone tried it and what the best recipe you have found, plus what could you serve it with to make it a main course rice does not seem right?

You sure its Iceberg lettuce and not blanched Chinese cabbage?
When I make potstickers I use pork mince finely shredded cabbage, shallots and some rehydrated mushrooms+salt and white pepper.
