Trahanas - a curious, traditional Cyprus soup.

    Hey foodies of boards,

    I thought you might be interested in this soup, which is very traditional to Cyprus (similar soups are found in nearby cuisines). I'm making this tomorrow and maybe you would like to have a look at this culinary oddity being used.

    It's made from a sort of dried porridge with is reconstituted. First cracked wheat is rolled in sour milk/yogurt and then formed into little cylinders which are then dried. This keeps for a long time (months)

    This is soaked in water overnight:

    The porridgey result will be boiled in chicken stock tomorrow until it becomes a thick, smooth soup, and served with cubes of halloumi.
