Vegetarian Slow Cooker recipes

    I've just bought a small slow cooker and was wondering if anyone has any tips for making nice veggie meals, or recipes that they use a lot.

    There's a big thread on slow cookers over in the cooking forum but it's mostly focussed on cooking joints of meat.

    I find any kind of bean stew to work really well in a slow cooker.

    My recipe for bean goulash (don't let the name tunr you off!)

    2 onions, diced
    100g of dried beans (black eyed beans work well, as do kidney beans, or even a mix of different beans if you like), pre-soaked for about 1 hour
    1 carrot, sliced thickly
    2 peppers cut into chunky pieces
    1/4 turnip, diced
    1 poato, peeled and dieced (optional)
    1 l of vegetable stock
    2 tbsp tomato puree
    3 bay leaves
    2 tbsp of paprika (mild)
    1 tsp of smoked paprika
    Salt, pepper and chili flakes to taste

    I usually fry the onion until transparent, then mix all the ingredients into the slow cooker and leave it to cook until the beans are soft. I will season with salt, pepper and chili at the very end.

    Very nice over some rice, and a lovely warming winter dish.
